El Mero Mero Taqueria

What began as a food truck and a dream evolved into a full-scale Mexican Taqueria and commercial kitchen in West Edmonton, located along 156th Street. El Mero Mero’s owners were passionate about creating a space that felt authentic—bringing a taste of home to Edmonton. The location, originally part of a subdivided warehouse, offers 6,000 ft2, with 1,500 ft2 dedicated to the Taqueria. This front area features a cozy tequila bar, seating for 50, and a full-service taco counter complete with coolers, POS, and vibrant displays. Finishes are inspired by traditional Mexican design, thoughtfully adapted to suit the Canadian context.

To maintain the open, high-ceilinged feel, custom wood crates, exposed beams, and string lights were added to evoke an indoor patio atmosphere. Two washrooms at the rear showcase colorful Mexican tiles and patterns. A mix of seating options—including high tops, communal tables, and singles—creates an inclusive environment for all ages. Ultimately, it’s the bold colors, layered lighting, enticing kitchen aromas, and welcoming staff that keep guests coming back to El Mero Mero.
